Funnily enough, I have absolutely no idea.  However two seconds on Google revealed that street traders need handwashing facilities where necessary.  A food business will fall into that category.

The top photograph is from All Things Nice I believe, whose Scores on the Doors rating is the top rating of 5 stars.  The bottom is from Guslhan.  Also with 5 stars. Ergo, I would suggest their knowledge of food hygiene is rather good.

Gloves are certainly not a panacea to good hygiene.  They can aid cross-contamination, and can often lead to people being slack with their hygiene standards.  The handling of money whilst wearing gloves being the obvious one pointed out.  They also reduce dexterity, and therefore can make life more tricky when using things like knives.

The Food Standards Agency comment on gloves is simple: "disposable gloves should never be used as an alternative to hand washing."

Many of the stalls we saw where people were using gloves to serve food, they were also using those same gloved hands to handle money. Kind of defeats the object. Didn't stop me enjoying some delicious food though :D
